Sweet potato cakes

 Another dish you can make with your sweet potato mash are the Sweet potato cakes. This is a vegan and gluten free recipe. Gluten free flour, especially the self raising variety, makes great fritters and savoury cakes as it crisps up so nicely. 

From a health point of view sweetcorn adds a lot of insoluble fibre that guides all the waste through the system in a much more efficient way. Fibre is so important and the consumption of lots of vegetables will keep you regular and therefore healthy.

Sweet potato cakes

Introduction

The first step is to make some sweet potato gratin and then work from there. Once you have the mash the cakes are quick and easy from there. I used to use these cakes in the Sky Apple cafe for the Asian burger. It was a bunless gluten free burger filled with various fillings and the sweet potato cakes formed the top and bottom bun part.


Ingredients

300g sweet potato mash

1 small tin of sweetcorn

50g gluten free flour or any flour if you don't want gluten free

Handful of chopped coriander

100 ml vegetable oil for frying


Method

Quite simply mix the ingredients together (not the oil) in a bowl and leave to rest for 20 minutes. Form the mixture into patties. The mix is quite sticky so you will need some flour on your hands when doing this.


Sweet potato cake raw mix


Heat the oil in a large frying pan placed over a medium heat. Don’t add the cakes until the oil is nice and hot and a tiny piece of the mix sizzles on contact with the oil.

Fry both sides until golden brown.


Sweet potato cakes frying


This recipe makes about 5 sweet potato cakes. If you want very firm cakes then add more flour. If you added some milk and some more flour and created something more like a batter then you could make sweet potato and sweetcorn pancakes.
