This is the salad cousin of the super food sandwich. It is also rich in nutrients, fibre and generally good stuff. The main difference is the inclusion of beetroot and pomegranate. Beetroot is known to be high in antioxidants and pomegranate even more health benefits are attributed to it.
2 cooked beetroots
little balsamic vinegar
16 slices of cucumber
4 tomatoes, sliced
2 avocados
1 small bag of mixed leaves including spinach
1/2 pomegranate
4 tablespoons super food pesto
little salt
Method
First of all you will need to make some super food pesto as outlined in a previous post. If you want to just get on with the salad then by all means use a jar of basil or red pesto instead.
Slice the beetroot, place it in a small bowl, and drizzle over a little balsamic vinegar or any vinegar you have available. Sprinkle with a tiny bit of salt.
Place the leaf in a bigger bowl just before serving. Add the cucumber, tomato, pomegranate and dress with a generous amount of the pesto. Arrange the beetroot on your plates or bowls. Divide the leaf mixture over the beetroot. Drizzle a little pesto over the plate around the salad. If you add a little oil to the pesto it will drizzle better.
Cut the avocados in half, remove the stones, and carefully scoop out the flesh keeping the halves as intact as possible. Cut into fans (not really necessary but it looks nice) and top the salads with it. A little scrunch of salt and pepper will nicely top it off.
This salad can be served as a starter, as a light lunch, or as an accompaniment to a more traditional protein based meal.
